Uehara Shuzo have gone back to producing almost all of their sake each year without any additional cultivated yeasts and they use traditional brewing methods where possible.
Wataribune is an ancient strain of rice and is a parent variety of Yamada Nishiki. The rice for this sake is sourced from local Shiga growers. It is aromatic, layered and full bodied with a fresh acidic profile.
