Chiyo Shuzo is run by Tetsuya Sakai. The Shinomine range of sake from Chiyo is named after the Shinomine mountain range not far from the brewery. Sakai-san’s focus with the Shinomine range is to craft balanced and acid-driven sake that showcases the rice type along with the ability to age gracefully.
Sakai-san has made a beautifully balanced and flavourful sake. Kimoto as a style can be deeply intense however his version here is round, soft and impeccably textured. It shows vibrant freshness and a refined acidity that leaves the drinker reaching for another glass. A versatile sake either on its own or with a broad selection of food - a wonderful all-rounder.

HANDLING: Once opened the Chiyo 'Shinomine Shinomine' will last well for at least 6 - 8 weeks, ideally in a refrigerator.
