Made from locally grown Oseto rice this sake is made utilising a rare yeast called KA-4. KA-4 is only obtained directly from the brewery in Kumamoto where yeast #9 was originally discovered. Thus KA-4 is considered the most pure example of #9 yeast and only available directly from the brewery. This sake is full-bodied and deeply layered with nutty, grassy and ripe melon characters. There is grip to the palate and the rich and powerful complexity goes on & on. Simply one of the great examples of this style of sake available. This sake will only soften and gain from some exposure to air.
