This is a wonderful opportunity to taste and compare these incredible Sake utilised by using a technique called Bodai-moto. Bodai-moto is an ancient and complex fermentation starter method. It is a pre-cursor to the Kimoto method which was invented in the Edo period. It is rare to see such examples made today.
