This sparkling sake from Heiwa Shuzo is made with Yamada Nishiki rice. The rice is polished to 50% making this a Junmai Daiginjo sparkling sake. A fresh and textural style with a fine mousse and lingering palate. Green apple, white flowers & melon. Brilliant as an aperitif however also works well with lighter dishes.
