Chiyo Shuzo is a very small brewery founded in 1873. The current Toji (Master Brewer) Tetsuya Sakai started his career in the wine industry. After marrying into the Chyio Shuzo family, Sakai-san' s career path changed to becoming a sake brewer. After 9 years working alongside the previous Toji at Chiyo, Sakai-san eventually took over the role of Toji in 2004.
An exceptional example of Junmai Daiginjo from Chiyo Shuzo. As with all their 'Kujira' products this is made with rice grown by the brewery. This is a very fine dry style with bright acidity supplemented by a lick of melon fruit.
A brillant example of the style from one of the most exciting sake producers anywhere.
